Does anyone understand heel height?

Does anyone understand the effects on various forms of skating of heel heights?

E.g., how does heel height affect jumps, turns, etc.? (How close to your comfort max should you go?

Why would heels be a good idea at all for jumps - I can jump higher and rotate more in bare feet than skates - is that typical?
